I'm just wondering if Z1s and V1s are capable of capturing the stars in the sky or is it better to use a green screen?

I shot the Halley's comet with a Z1 at a very slow shutter speed/framerate but there was too much light spill from the city to see stars at the time.
You might be better off with pinholes in a big black backlit panel and greenscreen as you suggest.
